Ingredients for the Best Simple Recipe for Cheeseburger Soup From Scratch

Onion – your choice of kind – we usually use a regular white onion

Carrots

Celery

Basil – dried basil flakes

Parsley – dried parsley flakes

Butter – salted

Ground beef

Potatoes – your choice of potato; we used russet potatoes but red potatoes or Yukon Gold potatoes would work as well.

Chicken brothhomemade chicken broth makes the best soup base! (Chicken broth from the store is great too!)

Salt

Pepper

Milk – whole milk is our preference

Flour – this is simply used to thicken, so any kind of flour will do

Cheese – original Velveeta cheese

How to make Cheeseburger Soup From Scratch

First, prep all the vegetables by washing and drying them; then dice them to your desired size. (A great way to do this is to use a handy little onion chopper!)

Next, get out a large soup pot or stockpot.

Inside your large pot, melt the butter and saute onion, carrots, and celery along with the basil and parsley.

After the onions, carrots, and celery are soft and sautéed to your liking, add the chicken broth and potatoes into the cooking pot.

Keep the soup at a low boil and cook until the potatoes are soft, 10 to 15 minutes, depending on the size of your potato chunks.

While the potatoes are cooking, cook the ground beef in a separate pan; crumble beef into bite-sized chunks while it’s cooking using a wooden spatula or meat chopper.

After the ground beef is fully cooked and browned, drain the excess grease, and add the ground beef to the pot of simmering veggies, along with the salt and pepper.

Put the milk and flour together in a shaker bottle and shake well to dissolve all the flour. (See notes!) Once no flour lumps remain, dump milk mixture into the soup pot and stir and simmer until thickened slightly.

Turn the burner to low and add the Velveeta cheese and sour cream.

Customize your soup

This creamy cheeseburger soup recipe is amazing just the way it is; however, if you wish to add your favorite toppings, you sure can! Bacon bits, shredded cheddar cheese, oyster crackers, or even green onions, to name a few, would all make splendid toppings. (And how about dill pickles served on the side?:)

Flavorful ground beef is our favorite meat to use here but sausage, ground pork, ground chicken or cooked and chopped bacon (or even ground venison if that’s your jam) would be acceptable substitutes. Or, to add additional flavor you can use a combination of meats! (For example, half ground pork and half ground beef.)

​Instead of chicken broth, you can use beef broth, vegetable broth, or your favorite broth of choice.

Notes

Store in an airtight container in the fridge for up to 5 days.

For best results, we do not recommend freezing this soup though you totally can! Something to keep in mind – the consistency and textures will be a little bit different.

Be advised, this recipe makes a big batch, perfect for a party or large family or hey, even game day!

If you don’t have a shaker bottle, you can use a simple mixing bowl and a whisk to combine the milk and flour, it’s just more difficult to get the flour to dissolve!
