Hello friends! I’ve been waiting since Easter to share this fun explosion cake with you!

We went to visit our Long Island family for Easter weekend and I picked up the ingredients to make it with the kiddos.

It’s a much simpler version of the gorgeous explosion cakes from The Power of Sprinkles: A Cake Book By The Founder of Flour Shop.

I first saw this when Amirah Kassem, the Founder of Flour Shop, appeared on The Rachael Ray Show.

It was just a couple of weeks before Easter and I immediately texted my daughter-in-law, Kelly, to see if I could make this with the kiddos when I visited.

I didn’t want to just assume it was ok, because let’s face it, that’s a lot of sugar! Although my kids are grown, I still remember what happened when they were on a sugar high-not fun!

Luckily she was fine with it, mainly because it was a special occasion. Since I would be making this with an 8 yo and a 3 yo, I wanted to simplify it so they could help make it.

Here is the original pin image that inspired this. I’m sharing some simple tips for making this explosion cake from a box mix. You can’t get much easier than that!

Ingredients

Step 1 – Follow the directions to make the cake. You can use any cake mix that you want.

I went with a funfetti cake mix, as it was perfect for the sprinkles theme. Isn’t it so much fun to bake with kids?

My husband was a baker and owned a bakery for many years, so there was a lot of baking in our house when the kids were small.

I don’t bake much anymore, unless it’s for a family function, but I definitely miss it.

The kids were so excited and loved being able to add the ingredients and mix the cake. Look how cute they are:

Step 2 – Bake the cakes according to the directions. We only used three of the cakes and made a triple layer cake.

My daughter’s boyfriend lucked out with the fourth cake!

Step 3 – Place the first layer on the cake plate and use a small glass jar to cut out the center of the cake.

Any small glass will do. Repeat the same process with the second layer. Be sure not to cut the top layer.

Step 4 – Fill the cake with sprinkles and M&M’s. Here is a tip for you-it takes ALOT of sprinkles!

I had to go back and buy another jar. This was probably the kids favorite part-aside from eating it!

You can also fill the cake with whatever candy you want. My daughter wants to make an oreo cookie cake with a chocolate cake mix and crushed oreos. That will probably be next!

Step 5 – Frost the cake with vanilla frosting and add a few M&M’s on top.

Step 6 – Cut the cake and watch how the sprinkles and candy “explodes” out of the cake! It really is fun to see. Check out Kiersten waiting patiently for her cake:

If you want to make a cake from scratch, of course that would work as well. But this was all about having fun with the kids and a cake from scratch didn’t make sense at their age.

This is something that may become an annual tradition for Easter. But we will definitely try the oreo one soon and I will update this post with the photos of that so you can see how it turned out.

Imagine how many cool cakes you could make with this idea? I’d love to hear what ingredients you would use to make an explosion cake. Leave a comment below and let me know.
